Matthias Knebel, the current owner and enthusiastic preserver of this heritage, has steered the winery since its reestablishment in 1990 with one unwavering guideline: "Respect". Here he refers to respect for centuries-old traditions, unspoiled nature, challenging growing conditions, and especially Riesling, the undisputed king of vines.
The landscape of terraced Moselle (in German "Terrassenmosel") is an incomparable icon in the wine-growing region. At many points in the Moselle Valley, the slopes present themselves so steep that the vines can only thrive on the narrow terraces secured by dry stone walls. These terraces, especially those in Winningen, are symbolic not only of wine growing, but represent an impressive cultural landscape created by man over the centuries.

Cultivated in these barren, stony steep slopes, the Riesling finds optimal conditions for its growth. It matures slowly and, depending on the location, unfolds different nuances that tell of its unique origins.
